RECIPE: Chicken With Mushroom and Garlic Cream Sauce

Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 8 oz button mushrooms
  • 4 tbsp garlic paste
  • 1 shallot, minced
  • 3 tbsp butter
  • 3 tbsp flour
  • 3 tbsp olive oil
  • 1 cup sour cream
  • 1 sprig rosemary
  • 1 cup chicken broth
  • Salt and pepper
  • 1 tsp paprika

Directions:

Slice chicken into bite size pieces. Season well with salt and pepper and massage into the meat. Slice onion thinly. Rinse and drain mushrooms. Remove mushroom stems and slice caps thinly. Mince rosemary finely. Add oil and chicken to pan over medium heat. Cook partially, browning the outside of the chicken. Remove and reserve. In the same pan, add butter, shallot, garlic, and mushrooms. Add 1 tsp salt and cook until mushrooms are browned. Add paprika and flour to the pan. Cook the paste, working it over the mushroom mix until the raw flour is lightly browned. Add rosemary and deglaze with broth. Whisk well until flour lumps are gone. Add chicken back in and simmer, stirring until sauce is thick enough to coat the back of a spoon. Remove from heat and stir in sour cream until incorporated. Serve with potatoes or pasta.
