RECIPE: Herbed Meatballs & Spaghetti

Ingredients

Sauce:

  • 2 lbs plum tomatoes
  • 2 onions, diced
  • 4 cloves garlic, crushed
  • 5 tbsp dried basil
  • 2 tbsp dried oregano
  • 1 cup chicken broth
  • Salt and pepper

Meatballs:

  • 1lb ground beef
  • 20 saltine crackers, crushed
  • 1 egg
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp dried Italian herbs
  • 1/4 cup mozzarella
  • 1/4 cup parmesan
  • Olive oil
  • Fresh basil

Directions

  1. Add all sauce components into a pot and simmer for 20 minutes. Then blend until smooth.
  2. Mix all meatball components in a large bowl and shape into golf balls. Bake at 375 degress F for 20 minutes or until cooked.
  3. Boil pasta in salted water until al dente according to directions and drain.
  4. Add meatballs to sauce and simmer for 10 minutes. Finish pasta in sauce and meatballs, then plate with a drizzle of olive oil and fresh basil.
