RECIPE: Shrimp Ceviche

  • 1 lb peeled and deveined raw shrimp
  • 3-4 tbsp and 1/2 tsp Kosher salt
  • 1/2 small red onion OR 1 medium shallot, finely chopped
  • 3/4 cup freshly squeezed lime juice
  • 2 medium tomatoes, chopped
  • 1 jalepeño, minced (add half for less heat, leave in seeds for more heat)
  • 1/2 cucumber. seeded and chopped
  • 1 avocado peeled, seeded, and chopped
  • 1/2 bunch of cilantro, roughly chopped
  • Tortilla chips for serving

Then, it’s time to get cooking!

  1. Bring a large pot of water to a boil. Add 3-4 tbsp Kosher salt.
  2. Add the shrimp and cook for 2-3 minutes or until pink.
  3. Drain the shrimp. Once cooled, chop the shrimp into 1/2 inch pieces.
  4. Place shrimp in a large bowl with lime juice and 1/2 tsp salt. Add seeded and chopped tomatoes, cucumber, avocado, minced jalepeño, and chopped cilantro.
  5. Toss, cover, and allow to marinate in the refrigerator for up to 1 hour.
  6. Serve with tortilla chips.
