Ingredients:

  • 1 lb macaroni pasta
  • 4 tbsp butter
  • 3 tbsp flour
  • 3 cups whole milk
  • 12 oz grated cheddar
  • 4 oz grated mozzarella
  • 4 oz grated Parmesan cheese
  • 1 tsp yellow mustard
  • 1 egg
  • 1 cup breadcrumbs

Directions:

Boil pasta until al dente. Drain and let cool. Melt butter over medium-low heat. Once melted, add flour and mix into a roux. Cook roux for 2 minutes, constantly adding milk. Once the roux is thick, add the rest of the milk. Add mustard, paprika, and bay leaf. Cook until the white sauce thickens and has an even consistency.

Remove from heat once the mix covers the back of a spoon, add all cheese, and stir until melted. Scramble the egg and add to sauce. Combine pasta and sauce, then transfer into a casserole dish. Add breadcrumbs to the top and bake for 20 minutes at 350 degrees.
