That little break is a great time to treat yourself to your first glass of <a href=\"https:\/\/www.wtso.com\/weeklytasting\/?utm_source=blog&amp;utm_medium=blog&amp;utm_campaign=cn%3Awtso%20nov%202020%20recipe%20blog%202%7Ccid%3Awtso%20blog&amp;utm_content=recipe%3A%20wild%20boar%20ragu%20bolognese\">Italian red wine<\/a> from the <a href=\"https:\/\/www.wtso.com\/weeklytasting\/?utm_source=blog&amp;utm_medium=blog&amp;utm_campaign=cn%3Awtso%20nov%202020%20recipe%20blog%202%7Ccid%3Awtso%20blog&amp;utm_content=recipe%3A%20wild%20boar%20ragu%20bolognese\">Understanding Nebbiolo Weekly Tasting set.\u00a0<\/a><\/li>\n<\/ol>\n<p><em>Now that you know why we love this recipe, it&#8217;s time to figure out why you will:<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Get the following ingredients:<\/strong><\/p>\n<ul>\n<li>1 pound wild boar shoulder, cut into \u00bd&#8221; cubes<\/li>\n<li>Kosher salt and black pepper<\/li>\n<li>1-1\/4 cups red wine<\/li>\n<li>2 celery stalks, diced<\/li>\n<li>2 carrots, diced<\/li>\n<li>4 cloves garlic, smashed<\/li>\n<li>2 bay leaves<\/li>\n<li>1 tablespoon fresh sage, chopped<\/li>\n<li>1 tablespoon fresh rosemary, chopped<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>1\/2 cup olive oil<\/li>\n<li>2 tbsp tomato paste<\/li>\n<li>1 28-oz can crushed tomatoes<\/li>\n<li>1 pinch red pepper flakes<\/li>\n<li>1 cup whole milk<\/li>\n<\/ul>\n<p><b>Then put them together by following these steps:<\/b><\/p>\n<p>1. Season wild boar with salt and pepper in a bowl. Add the wine, garlic cloves, and herbs to the bowl. Cover the bowl with plastic wrap and marinate the wild boar overnight.<\/p>\n<p>2. After marinating, remove the boar from the mixture and reserve the marinade. Remove garlic from marinade and mince finely.<\/p>\n<p>3. Heat olive oil in a large heavy pot. Add the onion, celery, carrots, and garlic. Saut\u00e9 until softened, about 5 minutes. Add the wild boar to the pot, and brown on all sides, then stir in the wine marinade.<\/p>\n<p>4. Increase the heat to high, and let the liquid reduce, about 7 minutes. Then stir in the tomato paste, crushed tomatoes, and red pepper flakes.<\/p>\n<p>5. Lower the heat, and simmer 1-\u00bd to 2 hours, until the boar is tender. Taste for seasoning and add more salt and pepper, if needed.<\/p>\n<p>6. Stir in the milk, and simmer the ragu another 30 minutes. Serve with pasta and grated Parmesan.<\/p>\n<p>&nbsp;<\/p>\n<p>Once you whip up this must-have meal, you&#8217;ll feel like a pro in no time.
