{"id":4674,"date":"2021-07-08T10:33:11","date_gmt":"2021-07-08T14:33:11","guid":{"rendered":"https:\/\/www.wtso.com\/blog\/?p=4674"},"modified":"2021-07-09T13:51:25","modified_gmt":"2021-07-09T17:51:25","slug":"recipe-bacon-cheeseburger","status":"publish","type":"post","link":"https:\/\/www.wtso.com\/blog\/recipe-bacon-cheeseburger\/","title":{"rendered":"RECIPE: Bacon Cheeseburger"},"content":{"rendered":"<p>This recipe is best paired with a Cabernet Sauvignon from Sonoma County, included in our upcoming\u00a0<a href=\"https:\/\/www.wtso.com\/weeklytasting\" target=\"_blank\" rel=\"noopener\">Weekly Tasting<\/a>.<\/p>\n<p><!--more--><\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>8 slices bacon<\/li>\n<li>6 tbsp mayonnaise<\/li>\n<li>1 tbsp ketchup<\/li>\n<li>1 tbsp mustard<\/li>\n<li>Kosher salt<\/li>\n<li>Freshly ground black pepper<\/li>\n<li>1\u00bd lbs ground beef<\/li>\n<li>4 hamburger rolls<\/li>\n<li>4 slices cheddar cheese<\/li>\n<li>4 large leaves of lettuce<\/li>\n<li>4 slices beefsteak tomato<\/li>\n<li>\u00bd red onion, sliced thinly<\/li>\n<li>\u00bd cup dill pickle chips<\/li>\n<\/ul>\n<h2>Directions:<\/h2>\n<p>1. Preheat oven to 400\u00b0F.<\/p>\n<p>2. Line a rimmed baking sheet with aluminum foil and place bacon down in strips. Bake until crisp, about 25 minutes. After bacon is done, reserve 2 tablespoons of<br \/>\nbacon fat and drain bacon strips on a towel-lined plate.<\/p>\n<p>3. In a medium bowl, combine mayonnaise, ketchup, mustard, and 1 teaspoon of black pepper in a medium bowl. Form ground beef into four 6-ounce patties.<br \/>\nSeason both sides well with salt and pepper.<\/p>\n<p>4. Heat a large cast iron skillet over medium-high heat. Add reserved bacon fat to skillet. Once hot, add patties to skillet. Cook, pressing down to smash the burger and<br \/>\nform a crust on the patty.<\/p>\n<p>5. Flip the burgers and press down again. Top with cheese and cover pan to melt cheese and continue cooking burgers to desired doneness.<\/p>\n<p>6. Spread mayonnaise mixture on both sides of burger buns. Place lettuce on each bottom bun.
