{"id":4684,"date":"2021-07-12T07:50:34","date_gmt":"2021-07-12T11:50:34","guid":{"rendered":"https:\/\/www.wtso.com\/blog\/?p=4684"},"modified":"2021-07-26T09:23:15","modified_gmt":"2021-07-26T13:23:15","slug":"recipe-mixed-berry-cobbler-with-streusel","status":"publish","type":"post","link":"https:\/\/www.wtso.com\/blog\/recipe-mixed-berry-cobbler-with-streusel\/","title":{"rendered":"RECIPE: Mixed Berry Cobbler with Streusel"},"content":{"rendered":"<p>We recommend that this recipe be served alongside a Napa Valley Cabernet Sauvignon, included in our upcoming\u00a0<a href=\"https:\/\/www.wtso.com\/weeklytasting\" target=\"_blank\" rel=\"noopener\">Weekly Tasting<\/a>.<\/p>\n<p><!--more--><\/p>\n<h2>Filling Ingredients:<\/h2>\n<ul>\n<li style=\"list-style-type: none;\"><\/li>\n<li>4 cups mixed berries, fresh or frozen<\/li>\n<li>\u00bc cup sugar<\/li>\n<li>2 tbsp cornstarch<\/li>\n<li>1 tsp lemon juice<\/li>\n<\/ul>\n<h2>Topping Ingredients:<\/h2>\n<ul>\n<li>\u00be cup all purpose flour<\/li>\n<li>\u00bc cup sugar<\/li>\n<li>\u00bd cup coconut, shredded<\/li>\n<li>1 tsp grated lemon zest<\/li>\n<li>\u00bc tsp salt<\/li>\n<li>6 tbsp cold unsalted butter, cubed<\/li>\n<li>1 cup sliced almonds<\/li>\n<li>Salt, to taste<\/li>\n<\/ul>\n<h2>Directions:<\/h2>\n<p>1. Preheat oven to 375\u00b0F and butter a 9-inch round pie dish.<\/p>\n<p>2. In a large bowl, mix together the filling ingredients (berries, sugar, cornstarch, and lemon juice) and pour into the baking dish.<\/p>\n<p>3. In a medium sized bowl, mix flour, sugar, lemon zest, and a pinch of salt. Add butter; use your fingers to mix in the cubes of cold butter. Rub the butter into the other ingredients until the mixture looks like coarse crumbs. Stir in almonds and coconut.<\/p>\n<p>4. Sprinkle the topping over the filling. Bake for 35-40 minutes, until the topping is golden brown and crispy, and the filling is bubbling.<\/p>\n<p>5.
