Find the perfect wines for this meal in <a href=\"https:\/\/www.wtso.com\/weeklytasting\" target=\"_blank\" rel=\"noopener\">A Tasting of Sonoma\u2019s Top 3 Wine Varieties<\/a> set, new this week from our <a href=\"https:\/\/www.wtso.com\/weeklytasting\" target=\"_blank\" rel=\"noopener\">Weekly Tasting<\/a>!<\/p>\n<h4>Ingredients:<\/h4>\n<ul>\n<li>1\u00bd lbs ground dark meat chicken<\/li>\n<li>\u00bd cup panko breadcrumbs<\/li>\n<li>3 scallions, sliced thinly<\/li>\n<li>1 large egg, lightly beaten<\/li>\n<li>Kosher salt<\/li>\n<li>Freshly ground black pepper<\/li>\n<li>\u00bd cup low-sodium soy sauce<\/li>\n<li>\u00bd cup mirin or dry sherry<\/li>\n<li>1 tbsp rice vinegar<\/li>\n<li>1 tbsp maple syrup<\/li>\n<li>1 tbsp cornstarch<\/li>\n<li>2 cloves garlic, grated<\/li>\n<li>Sesame seeds, for serving<\/li>\n<\/ul>\n<h4>Directions:<\/h4>\n<ol>\n<li>Preheat oven to 400\u00b0F. Line a rimmed baking sheet with parchment paper.<\/li>\n<li>In a large mixing bowl, add the chicken, panko, scallions, egg. Season with salt and pepper. Roll a scoop of the meat mixture into 1&#8243;&#8221; balls and place on the baking sheet.<\/li>\n<li>Bake in the oven until cooked through, about 10-12 minutes.<\/li>\n<li>While the meatballs are baking, add soy sauce, mirin, rice vinegar, maple syrup, cornstarch, garlic and 1 cup water in a medium bowl. Whisk together. Pour the sauce into a large saucepan and bring the mixture to a boil over medium-high heat. Let the sauce cook for 8-10 minutes until reduced by half and slightly thickened and reduced by half.<\/li>\n<li>Once meatballs are cooked, add them to the pan to toss in the teriyaki sauce, working in batches if necessary.
