Tasting Notes
The typical wine of Valpolicella; light, dry, and medium-bodied. Ruby red with a youthful and fruity bouquet and soft, delicate flavor.

Service
Ideal to accompany pasta and rice dishes, white meat, and any other simple dish. Best served at 18 degrees C.

Harvest
The grapes are harvested in the first ten days of October.

Winemaking Process
De-stalking and gentle pressing followed by maceration lasting approx. ten days during which time manual punching down and pumping over is carried out. Fermentation temperature: 20-25 degrees C. After being drawn off, the wine undergoes a process of malolactic fermentation.

The 2021 'Fontana del Fongo' Valpolicella Classico begins with aromas of cherries and red berries which are woven together with spices, sweet licorice and wild herbs. The palate is medium-bodied and structured with silky tannins. It remains balanced as flavors of sweet red fruit are kept fresh and inviting by its lovely underlying acidity. Delicious now and should continue to drink well as it evolves over the next few years.
