Producer's Philosophy
This estate has belonged to our families since the end of the 18th century. Over the last few generations, men from our two families have brought together their personal touch in order to develop the domain. Now, it is our turn - with this exceptional heritage - to continue the work of our ancestors while keeping in mind adapting the methods to our time and using techniques in perfect osmosis with nature.
Viticulture and Winemaking
The diversity of our terroir directs our vinification to suit every single parcel's character. Chardonnay's elegance is that way expressed under all its range. Running a human-size operation, we can afford to do work in the vineyards by hand. To preserve the environment, treatments are reasoned and minimized. Moreover, they are done in "solo," side by side in each row, to directly treat the vines. All our parcels are plowed, causing aeration of the ground, which helps the roots to find the nutrients they need. The vines are trimmed as high and close as possible in order to help photosynthesis. The grapes are then aerated and can find full sun for better maturation. Harvest is done by hand when maturity reaches its maximum. Pressing is done softly and slowly to extract the best of the grape. After a light decanting, the wine goes directly into the barrels or the thermo-regulated vats to begin fermentation. Wines are aged on lees for ten months, with weekly "batonnages" to bring roundness and opulence.

Tasting Notes
Its first nose is rather fruity, leading to fine mineral fragrances. Great balance of flavors in the mouth between liveliness and freshness, provided by tank aging and generous roundness, thanks to oak aging.
Service Recommendations
Aging Potential: Pouilly-Fuisse is a wine for aging. It is crisp but silky, easy to drink, with good acidity that guarantees an improvement in bottle for 3-5 years after harvest.
Serving Temperature: 12 to 13 degrees C
Food Pairings: It ideally partners with noble crustaceans, fish, white meat in cream sauce, and foie gras.

This Pouilly-Fuisse is made from different Vergisson parcels. It combines the purity of ripe fruit with the typical minerality of Vergisson terroirs.
