RECIPE: Spiced Duck Breast With Citrus-Honey Drizzle

Ingredients

4 duck breasts

Spice Blend:

  • 2 tsp ground nutmeg
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 ½ tsp paprika
  • 1 tsp allspice
  • 1 tsp ground ginger
  • ¼ tsp cinnamon

Citrus Sauce:

  • 2 tbsp honey
  • Zest 1 orange
  • Juice 1 orange
  • Juice 1 lemon

Instructions:

  1. Score the duck breasts by slicing a few slits through the skin but not through the fat. Season meat side with salt and spice blend. Season the fat side with salt.
  2. Cook the duck breasts by starting them in a cold pan, fat side down. Cook on medium heat for 10 minutes without flipping. Flip and cook spiced side for 4 minutes. Remove from heat and let rest for 5 minutes.
  3. In a small saucepan, add zest, juice, and honey. Simmer the mixture until reduced and syrupy.
  4. Slice the duck breasts and drizzle with citrus honey sauce.
