Harvesting
The grapes are harvested in September. The finest and healthiest bunches are placed in trays, taking the utmost care not to damage the grapes. They are then moved to dedicated dry and well-ventilated fruit stores, where they are left to wither until winter, losing up to 40% of their weight.
Vinification
De-stalking and gentle pressing. Maceration lasts 45 days, with manual punching down and pumping over throughout. Fermentation temperature is regulated at 20 degrees C. After being drawn off, the wine is transferred into casks and large Slavonian oak barrels. After being left to mature for 24 months, the wine undergoes further aging in the bottle.
Tasting Notes
Ruby red, with an intense and elegant bouquet. A full-bodied and strong flavor that's warm, soft, velvety, and long lasting.

Food Pairing: The perfect accompaniment to game, spit-roasted meat, roasts, and mature cheeses
Recommendations: The bottle should be opened at least one hour before drinking and served at a temperature of 16 to 18 degrees C

The 2019 Amarone della Valpolicella Classico opens with aromas of dark cherries, plums and blackberries along with tobacco, chocolate raisins and a mineral character. Full-Bodied and balanced with a lovely velvety texture backed by an appealing sense of freshness lasting through the finish. A wonderful expression in this vintage, but allow this some additional bottle age to continue to evolve and gain complexity.

Full bottle 1,486 g. 60% Corvina, 20% Corvinone, 15% Rondinella, 5% Molinara. 30-year-old vines. Picked in the first half of September, dried up until a loss of 40% of weight. 45-day maceration with manual punchdown and pumpover. Aged in barrels and then large Slavonian casks for 24 months.
Leather, souk spice, barberries, dried cherries. More savoury than their Simison Amarone, so less sumptuously seductive but wonderfully fresh and the tannins are fine, long-limbed, fragrant and elegant. The finish is spicy but it also has this great pepperminty, cleansing finish. (TC)
