Origin
The origin of the winery goes back to the eighteenth century. The ancestors of Jose Pablo converted the old winemaking tradition into a commercial venture in 1760. Well-rooted tradition, the land, and indigenous grape clones became the greatest assets for the winery and serve as a guarantee for the highest quality wines.

The Winery
The winery is built on 2,200 square meters and has three different sections. The first is where the wines are fermented in stainless steel and under a temperature-controlled process. The second section is for bottling and storage. The third section is the underground cellar, where the barrels keep the wine at peace during the aging process.

The Vineyards
One of the best assets of the Pablo winery is the vineyards. With a diversity of vines that average 30 years of age - some reaching 100 - the Pablo family has always been conscious of the local clones and has kept the indigenous grapes alive, mostly Garnacha and the unique Vidadillo grape.

Terroir
Vinedos y Bodegas Pablo owns 60 ha all in Almonacid de la Sierra. The vineyards are located at the foothills of Sierra del Algairen at different altitudes ranging from 550 to 750 meters high. The soils are diverse - stony deep, pebbles, clay and chalk, and sandy, but the common denominator is dry and poor. Jose Pablo's objective is to stamp the personality and expression of every plot in its wine. Therefore, each wine is vinified separately, making the final coupage at the end of the process to achieve maximum harmony and expression of the vineyard. The vineyards are ecologically cultivated, and the harvest takes place gradually by plot and varietal as the grapes ripen to perfection.

The 2004 Gran Viu Finca Santiago is a blend of 60% Garnacha, 20% Vidadillo, and 20% Carinena sourced from a single 100-year-old vineyard. It was aged [...] in a mix of new and used French oak. A glass-coating opaque purple, it delivers a complex bouquet of pain grille, pencil lead, espresso, licorice, plum, blueberry, and black cherry jam. Opulent and layered, on the palate additional notes of chocolate and mocha emerge. There is some well-concealed ripe tannin which will support another 5-7 years of evolution. Drink this impressive effort from 2012-2035.
