Wines Details
Grape Varieties: Sangiovese and Cabernet Sauvignon
Harvest: A part of the Sangiovese grapes - the ones in the best health conditions - are picked early during the first half of September, and they are dried for 7-13 days, where they lose almost 30% of their weight, but they gain fruitiness and ripeness.
Production: After this short drying process, we add it to the main blend. After maceration and fermentation, a portion of the blend ages for four months in new French barrique.
Tasting and Pairing: A velvety structure on the palate leaves a graceful softness in the mouth, which makes it suitable for pasta, red meats, and game in general.
Alcohol: 14.00%
Serve at: 18-20 degrees C

2017 Harvest Details
The most important factor of the 2017 harvest was that it was one of the driest in Italian history. During the summer, the average temperature was high. During August, the night temperature was a bit cool, saving the harvest. This hot temperature provided vines with very healthy conditions, resulting in concentration, good levels of acidity, and generally low yields.
