Winemaking Details
The best bunches, which are dried on trellises or in baskets inside the cellar, are selected before harvest takes place. Before the maceration process, a cold maceration occurs between 0-4 degrees C for 4 to 6 days, depending on the variety. The alcoholic fermentation takes place under a maximum temperature of 24 degrees C for 10 to 14 days to let the fruitiest elements express themselves at their best. At the end of malolactic fermentation, a second alcoholic fermentation process of 2 to 3 days begins (usually in November) when dried grape must is added to the already fermented wine. The must addition is about 3-20% and gives the wine overripe flavors that are harmoniously balanced with its fruity notes.
