Viticultural Practices
The soil is hoed, or grass is left to grow in between the rows, depending on the terroir. Debudding, suckering (dedoublage), manual leaf removal, green harvest depending on the vintages. The grapes are carefully sorted then harvested by hand.

Vinification
The grapes are partially destemmed before a pre-fermentation maceration at cold temperatures for 24 hours, under inert gas (inertage). Gentle pneumatic pressing to preserve the freshness of the aromas. The juice rests in tank at a very low temperature to stabilize. It is then cleared (debourbage) prior to the alcoholic fermentation. The young wine is left on its fine lees for 2 to 3 months, then filtered before bottling.

Tasting Notes
Pale salmon color. Expressive nose of red cherry and pomegranate. A dry and fresh rose perfect for aperitif time and light fares. Enjoy within 2-3 years of the vintage. Recommended serving temperature between 46 and 50 F (8 to 10 degrees C).
