Vineyard
In the quest for quality and excellence, the vineyard work is carried out with particular care, working the soil and controlling yields (Guyot pruning, removal of surplus shoots, and, if necessary, green harvesting to keep yields under 40 hl per hectare). Chateau de Cayx comes from a 7ha plot of vines. The average vine age is 35. Following green harvest, leaves are manually removed from the grapes, and berries are selected on the sorting table. Grapes are mechanically harvested and sorted by machinery before being sorted manually for the second time on the table in the cellar.

Vinification
Chateau de Cayx undergoes cold (8 degrees C) pre-fermentation maceration for three days. The wine is made in temperature-controlled stainless steel tanks. Alcoholic fermentation and maceration occur at a temperature of 26-28 degrees C for 28 days. Final maceration occurs at 32-35 degrees C. Malolactic fermentation and aging take place in one-third new barrels for a minimum of 12 months.

Tasting Notes
A purple-colored wine, Chateau de Cayx has the delicate aroma of red fruit and delivers all the intensity and fleshy character typical of Malbec. The wine has spicy notes and silky tannins on the palate. It is also elegant and wine for up to 10 years. Best served at room temperature (19 degrees C) to accompany either duck breast with cherries or Quercy saddle of lamb.

The Chateau de Cayx Cahors opens to aromas of red berries and cherries that are woven together with spices, licorice, wild lavender and a dash of oak. On the palate this is fresh and inviting with a medium body that is structured with fine tannins and a gorgeous silky texture which continues through the finish.
