Winemaking and Winegrowing
Full grape pressing. Cold settling for 48h. No use of chemical inputs other than SO2. Fermentations in vats at low temperatures with indigenous yeasts for about four months. Nine months on lees in French oak casks. Fining with clay. Tangential filtration before bottling.
