Wine Details
'Governo all'Uso Toscano' is the rediscovery of an ancient winemaking process that recalls the rich history of a specific terroir, characterizing wines of the Chianti area between the 19th and early 20th century.

Vinification Notes
The wine is produced with grapes harvested from the Tuscany region in September, undergoing a drying process inside dedicated rooms called 'fruttai.' The drying process is carefully monitored to ensure the grapes remain perfectly undamaged and rich in sugar content throughout the four-week process. The fermentation is initially conducted in stainless steel tanks at controlled temperatures. After racking, the second fermentation begins by adding the September harvest to the bulk wine. This slow second fermentation takes place in large tonneaux, and thanks to it, the wine develops a smoother, softer, full body. At the same time, it maintains Sangiovese's strong personality and elegance.
