Bottles with the initials RM, or Recoltant-Manipulant, belong to a category known as "Grower Champagnes," in which estate-grown grapes are vinified by their producer.
The Julien Denby Brut Reserve NV exemplifies the Blanc de Noirs style of Champagne by utilizing the white flesh and juice of black grapes, in this case, old-vine Pinot Noir.
Its rich yet refined mousse and notes of apple, strawberry, honeysuckle, and brioche gain complexity in the glass while providing delicate bubbles and lively acidity for versatile pairings.

NV Reserve Brut
Background
Burgundian-born Franco-American Julien Denby completed his university studies in the USA and was inspired by wine appreciation classes led by one of the rare American professionals holding both MS and MW qualifications. He decided to return to his French roots and collaborate with a small, well-established southern Champagne grower to produce his limited production Pinot Noir blanc de noirs blend. This is the first in a series of artisanal micro-cuvees disgorged early this year.
Production
Low-yielding old vines planted in the 1950s. Includes annual reserve wines plus perpetual reserves stored in foudres.
Tasting Notes
The color is light straw gold with pinpoint effervescence, and the charming aromatics reveal hints of mint, nutmeg, plums, and apricot. Dosage at eight g/l keeps elegance and balance in play with plenty of white peach, vine peach, Mirabelle plum, and honey notes with hints of mint and salinity on the chiseled palate leading to a persistent, well-textured finish. There is some nice incisive and racy acidity which underpins the overall refreshing and intense aspect of this youthful and lively Champagne, brimming with character.
Enjoyment
Perfect as an aperitif with friends or alongside poultry dishes.
