Region
This tiny producer is an offshoot of the Fourrier-Delmotte winemaking family, with vineyards nestled in the beautiful hilly slopes of Southern Champagne's Cote des Bar. The region between the Seine and Aube Rivers has been a Unesco World Heritage Site since 2015. Its mosaic of vineyards, including Delfour's old vines parcels, is planted predominantly with Pinot Noir. Thriving on the Kimmeridgian limestone soil from the Jurassic period, the vines' identical geological influence connects them directly to their close Chardonnay-producing neighbor, Chablis!

Winemaking
This cuvee weighs in with 11g of residual sugar and is a blend of 90% old-vine Pinot Noir and 10% 35-year-old Chardonnay vines. Delfour's production is designed to commemorate the Delmotte and Fourrier families' association with ancestral vineyard holdings going back several generations.

Tasting Notes
Ideal for casual summer festivities, this well-balanced family grower's blend has lively, refreshing bubbles with gentle persistence. The intense salmon-pink hue is vivid and eye-catching. The lively bouquet screams fresh red berries. The rich palate is broad-shouldered with hints of minerality, supported by the addition of Chardonnay. Mouthwatering layers of blackberry and strawberry lead to a clean, balanced finish with freshness and nice length.

Service
Perfect as a fruit-driven aperitif. We also enjoyed this tiny production rose with light, fresh, fruit-based desserts.
