- In 2013, Jason Fox took a determination to craft a quality product, a clear vision for style, and his preparation from the Walla Walla Community College's Enology and Viticulture program to create Lagana, the winery that would become the focus of his true passion. Bringing on Todd Bernave four years later solidified the brand's refined treatment of the red wines and also the friendship that keeps the momentum going with the inevitable speed bumps along the way.
- Their 2018 J and S Vineyards Cabernet Sauvignon is made from clone 191, known for producing wines with great aging potential. The grapes come from a location on the Walla Walla Valley floor, just north of the Oregon border, with a cooler microclimate that allows for longer "hang time," during which flavors and aromatic compounds develop in sync with natural sugar accumulation.
- Adding 5% Petit Verdot provides just enough of an earthy, umami counterpoint to frame the Cabernet's beautiful raspberry, redcurrant, and cassis notes. Aging in 50% new oak tames the tannins and provides a bridging effect for all the taste elements, as decanting or time properly stored will optimally reveal.
