2022 Paso Robles Red Blend
Winemaking Notes
Fermented in temperature-controlled stainless steel tanks with a maximum fermentation temperature of 84 to 90 degrees F to enhance mouthfeel or heighten aromatics. A mix of yeasts tailored to bring out the qualities of each variety was utilized to increase aromatic complexity, color, structure, and mouthfeel. Pressed at dryness after 17 days of maceration. Racked off gross lees after three days settling and inoculated for malolactic fermentation.
