Grapes and Vineyards
Benedictine monks carried it to Gioia del Colle area in the 17th century. Nowadays Primitivo - so called for its premature development - is among the most appreciated Apulian wines. Average size leaf with five lobes, conical cluster. Gobelet training system. Vine yield is 2-2.5 kg.

Vinification
After maturation, grapes are hand-harvested, destemmed, and pressed as soon as possible. Once the fermentation starts at a controlled temperature (22-25 degree C) in 100hl steel tanks, the must undergo regular pumping over and delestage until the end of fermentation.

Characteristics of Wine
Deep red colour, full and intense bouquet with ripe fruits and pale tobacco aromas. Pleasant harmonic taste with good aroma persistence. Well-balanced and mature tannins. This wine should be served at a temperature between 16 and 18 degrees C. Its resolute and passionate personality perfectly matches spicy goat and sheep cheese, as well as salami and ham.
