Winemaking Details
Before the fermentation process, the grapes cold macerate between 0 and 4 degrees C for 4-6 days, depending on the grape varieties. Alcoholic fermentation follows at a controlled temperature of a maximum of 24 degrees C, which lasts for 10-14 days to let the fruitiest elements express at their best. Then, the new wine "repasses" on the still sweet skins of the wines obtained by the drying process. After 10-14 days and when the second partial fermentation process ends, the wine is ready for malolactic fermentation.

Bouquet: Intense, complex, and fragrant aromas of cherries in alcohol and ripe blackberries; anise, licorice, and cocoa pralines on the finish
Flavor: Enveloping, voluptuous, velvety, intense, and strong; soft tannins lead to a subtle and particular sweetness on the long-lasting finish
Pairings: Baked first courses, sauteed red meats, and fresh cheeses. Suggested with beef tenderloin with mushrooms and bone marrow.
