Vinification
Manual selective harvest, crushing, and destemming. Fermentation in stainless steel at a controlled temperature, maceration on the skins, daily pumping of the must over the cap.

Winemaker's Notes
Elegant structure, lingering bouquet packed with spices and hints of licorice. Full, sumptuous character; velvety, with plenty of tannins.

This has a shy nose that eventually reveals aromas suggesting scorched earth, cedar and mocha. The tight palate is lean in terms of fruit richness, offering ground clove, toasted hazelnut and a suggestion of sour cherry alongside assertive, astringent tannins. Drink after 2023.
