Winemaking Notes
The fruit for our Cabernet Sauvignon comes from the Beller Vineyard on Mt. Veeder. It is a co-ferment of Cabernet Sauvignon Clone 169 and Petit Verdot. The grapes were harvested on September 24th, 2019. The grapes were fermented using indigenous yeast and malolactic bacteria and pressed off the skins on October 15th. The wine was aged in thin-staved Bordeaux Chateau barrels for 17 months and racked through the heads (soutirage traditionnel) every three months.

Tasting Notes
The 2019 Beller Vineyard Cabernet Sauvignon has a dark - nearly opaque - garnet color. The nose displays heady aromas of cassis, cherry, leather, and hints of fresh thyme. The wine has a fruit-sweet entry on the palate and is mouth-coating and full on the mid-palate, with echoes of black fruit and herbs found on the nose. The wine is elegant yet concentrated at the same time. This sense carries through to the long, vibrant finish.
