2021 Eliza's Cuvee
Vineyard
Deep in the heart of Napa Valley, H.W. Crabb planted a vast empire of vines in the 1860s. Eventually, it grew thick with grapes, orange trees, and Italian chestnuts. So rich was it with life and bounty that Crabb nobly bestowed upon the wine produced from the vineyard the Greek name To Kalon, or highest beauty. Today, To Kalon Vineyard Company is dedicated to crafting unique expressions of Cabernet Sauvignon from this storied place. Situated between the sheltering Vaca and Mayacamas mountain ranges in Napa Valley, To Kalon Vineyard's well-drained, gravelly soil allows the vines to root deeply, finding precious moisture and nutrients. The broad diurnal temperature shifts and reliable sun, wind, and fog provide an ideal blend of growth and rest for complex flavor development.
Wine Details
To Kalon Vineyard Company's 'Eliza's' cuvee is a blend of Cabernet Franc and Cabernet Sauvignon, two varieties that best showcase the strength and spirit of this historic site at the foot of the Mayacamas Mountains. The wine is named after Eliza Yount, one of Napa's best-known early pioneers, the widow of the founder of nearby Yountville, and one-time owner of a quiet corner of To Kalon on Walnut Lane that is now home to our coveted planting of Cabernet Franc. This blend produces one of the most compelling examples of Napa Valley wine, with the Cabernet Franc bringing exotic spice notes and floral aromas, and the Cabernet Sauvignon providing weight, structure, and a deep, rich, black fruit character. The combination is rare and uniquely To Kalon - a wine that is effusive and exuberant now, but will age for decades to come.

Tasting Notes: Fresh, structured but rather light in feel for a full-bodied blend of 60% Cabernet Franc and 40% Cabernet Sauvignon. Good acidity matches moderate tannins in this almost gentle, delicious but age-worthy wine. Red and black fruit, mint and tobacco accents lead to a luxurious, lingering finish. Drinkable now, but best from 2028.

Tasting Notes: The 2021 Eliza’s is a powerhouse wine built on super structured tannins and a solid spine of racy acid tension. Bay laurel, rich dark berry fruit, incense, and unsmoked tobacco add layers of depth and complexity. The finish is long and persistent, reinforcing its bold structure and refined intensity - a wine of both power and poise.

Tasting Notes: This red shows lovely range, as sweet tobacco, dried violet and warm paving stone hints all smolder underneath a vivid, pure and polished core of black currant and black cherry puree. Still youthfully taut, as the structure is prominent, this just requires patience to unwind fully. When it does, this will feel really suave. Cabernet Franc and Cabernet Sauvignon. Best from 2027 through 2045.
