Vinification
80% stainless steel tanks, 20% old oak barrels (average five years). Alcoholic fermentation under controlled temperature (18 degrees C). Malolactic fermentation. Aging 12 months in stainless steel tanks. Tartaric precipitation, cold stabilization by negative temperature, and filtration with kieselguhr.

Generous, sunny wine with frank aromas of white peach. Fresh and mineral finish.

The 2018 Chablis Fourchaume 1er Cru, from a parcel planted between 1953 and 1972 by Andre Tremblay, has a well-defined bouquet of freshly sliced red apples, wet limestone and light smoky scents. The palate is well balanced with a fine bead of acidity, harmonious and focused; touches of red cherry furnish the finish. This is a lovely, irresistible Fourchaume that is going to be difficult to not drink over the next 2-3 years - a shame, as I suspect it will age well.

This is very bright and perfumed with aromas of spiced peach custard with white flowers. The palate has a keen sense of balance with good acidity, crisp fruit and a flinty finish. Needs a year or two. Try in 2021.

Notes of pear, orange oil and nutmeg introduce the 2018 Chablis 1er Cru Fourchaume, a medium to full-bodied, ample and fleshy wine with an enveloping core of fruit and racy acids. This has turned out well.

A little sweet spice on the nose with ripe green fruits – lime and greengage. Mirabelle plum, juicy yet compact on the palate. Tension builds with acidity but there is a building lactic creaminess too. (TP)
