Winemaking
Hand-picked grapes in 13 kg boxes. Cooling of grapes in a refrigerated room down to 4 degrees C. Double hand selection of the best clusters and grapes. Seven-day cold pre-fermentation maceration at 10 degrees C. Plot by plot vinification in thermoregulated stainless steel tanks for a month. Smooth extraction with regular punch downs and pump-over maceration techniques.

Time in Oak
12 to 14 months on fine lees in American and French oak barrels (20% new).

Tasting Notes
Very expressive nose, with hints of blackberry liquorice and violet, but also more smoky aromas when aerated. The wine's tannic structure is soft and silky on the palate. Fruity aromas on the nose joined to its acidic palate give this wine a long aftertaste.

Opaque ruby. Smoky cherry and black currant aromas are complicated by suggestions of pipe tobacco, violet and mocha. Spice-accented black and blue fruit and floral pastille flavors put on weight and turn sweeter with air. Displays very good power but comes off lively, finishing long and smooth, with repeating florality and supple tannins.

Plenty of grape skin and cold phenolic aromas. A full body, chewy tannins and dark chocolate undertones. This is a little overdone now, but should come around. Drink in 2018.
