Climate
Sicily, the 'land of the sun,' has a Mediterranean climate along the coasts. The climate becomes slightly more continental at hilly levels in inland areas, with moderately cold winters and hot summers.

Vinification
At the beginning of October, grapes reach their perfect ripeness, and the winemaking process starts from the vine. The withering process takes place in the vineyard by cutting the grapes' petiole but leaving them on the vine for about 15 days. During this period, 50% of the grapes' weight vaporizes. Drying gives the wines typical notes of ripe fruit, such as plums and raisins. Hand-picked grapes are pressed, and fermentation starts. The skins are left on the must for an extended period to extract flavors and the characteristic red color. Subsequently, the wine is aged in barrels for about 5-6 months. This aging gives pleasant notes of spices and vanilla.
