Winemaking and Winegrowing
Full grape pressing. Cold settling for 48 hours. No use of chemical inputs other than S02. Fermentations in casks and stainless steel vats at low temperature with indigenous yeasts for about four months. Nine months on lees, in French oak casks and vats. Fining with clay. Tangential filtration before bottling.
