Winemaker's Notes
The Coteaux d'Aix en Provence is located on colluvial soils, ideal for rose wines.

Vineyard
Varieties: Grenache Noir, Syrah, Cinsault, and Cabernet Sauvignon
Soil: This rough, sun-baked terrain is composed of hard limestone and clay soils that produce grapes with loads of character

Winemaking
Direct pressing at low pressure. Stabulation on bourbes for five to seven days. Cold static settling (48 hours). Alcoholic fermentation in stainless steel tanks with temperature control.

Aging
Three months in stainless steel vats. Batonnage on fine lees to accentuate the sensation of fat in the mouth.

Tasting Notes
A pale rose by design. Red fruit like raspberries and strawberries come out on the nose, with more exotic fruit like guava in the background. The palate is fresh and clean in the mouth, emphasizing ripe strawberries and perfectly balanced acidity.

Pairing
This wine will work perfectly with Mediterranean cuisines such as salade Nicoise, eggplant gratin, mussels in cream sauce, or barbecued meat. Serve quite cool, between 10 and 12 degrees C.

This Rose begins with fresh inviting aromatics of citrus, strawberries, orange zest, white peaches and minerals all coming together beautifully in the glass. On the palate this is just as impressive showing a wonderful balance of bright acidity and minerality leading to the pretty finish.
