Winemaking Process
Traditional, in concrete vats without heating. Cold pre-fermentation for 48 hours. Punching down every day for the six weeks, with a controlled temperature between 16 and 27 degrees C. Maturing in concrete vats for 10 months. Very light sulphiting during bottling. No sulfur during vinification.
