Jean-Pierre Bouillac knew from childhood that he would establish his own label, building on the experiences of three previous generations of Bordeaux winemakers. His first plantings in 1996, covering five hectares, were a risk that has paid off, allowing him to increase his vineyard holdings twentyfold. Vinification
Mechanical harvesting. The crushed harvest goes through our thermoregulation system (easier extraction of color, aromas, and tannins). Filling in temperature-controlled stainless steel tanks. Alcoholic fermentation. Malolactic fermentation. Filtration with a tangential filter. Aging in vats for 14 to 18 months.

Tasting Comments
Elegant, finely spiced, with a fruity nose. The palate is clean and fresh, full and fruity, supported by fine tannins that carry through to the finish with a sensation of vitality.

Food Pairing
This wine is always pleasant. It can be drunk at any moment without concern. It will be nice with hot starters or a main course such as roasted chicken.
