Cremant d'Alsace Brut
Production
This Cremant d'Alsace comes from a harmonious blend of Pinot Blanc, Auxerrois, and Pinot Gris. This is made traditionally, with a second fermentation, the "prise de mousse," in the bottle. During aging on the lees, the bottles are rotated daily, gradually from the horizontal to the vertical position, so the yeast deposit accumulates in the neck of the bottle and awaits removal. At the time of disgorgement, the neck of the bottle is frozen and, enclosed in ice, the sediment is ejected by natural pressure. Then, in the finest traditional way, the resulting space is filled with liquor, providing its own style.

Tasting Notes
Beautiful pale yellow robe with a persistent stream of fine bubbles. Fruity and expressive aromas of green apple and white fruits. Some light nut aromas due to aging for 16 months. Well-balanced, this Cremant shows an acidic structure which brings finesse and freshness. This Cremant is elegant and fresh without being aggressive or having a heavy finish.

Pairing: Served as an aperitif, it is also a gastronomic partner throughout a meal.

Tasting Notes: Golden straw color. Aromas and flavors of green apple and jackfruit, apricot and jasmine, crushed stone, and honey wheat with a satiny, lively, effervescent, dry medium body and a tingling, interesting, medium-length finish revealing suggestions of jackfruit, white peach, marzipan and jasmine, and white tea with lemon zest. Complex and delicious with ripe fruit, fresh flowers, and a touch of minerality; this is a seriously good sparkling wine.
