Fermentation
The grapes are selected from vineyards over 10 years old and harvested by hand when they reach perfect phenolic maturation. Maceration takes place at 35 degrees C for 12 hours. Fermentation at controlled temperature (max 27 degrees C) follows, with post-fermentation maceration on the skins for a total of 8 days from the start of processing. Natural malolactic fermentation takes place a few days after drawing off.

Production Details
Aging: In 225-L French oak barriques (40% once-used, 60% twice-used) for 6 months
Refining: In bottle for 10 months
Aging Potential: A moderately structured Ciliegiolo to be drunk preferably 3-6 years after its vintage

Description
Concentrated and luminous ruby red. On the nose, it displays an elegant, complex, and varied bouquet of dark fruits, flowers, and spices. On the palate, it is fine, smooth, and balanced. Fresh and sapid, it shows round tannins and a nice softness. Finishes with good persistence.

Tasting Notes: On the nose, juicy, sweet blackberries burst over tea leaves, savory herbs and spices, and the palate leans even further into the sweetness with raspberry jam, ripe peach and Cara Cara orange. Refined, carefully stitched tannins contrast well with spirited acid.

Tasting Notes: Made with Tuscan native grape Ciliegiolo and aged for six months in barrique, the 2020 Capoccia Riserva opens with aromas of black-skinned fruit, Mediterranean scrub and oak-driven spice. On the linear, rather lean palate, dusty, drying tannins accompany dried cherry, vanilla and coffee bean.
