Maturation time in the cellar is more than twice that required by the appellation rules.
Dosage
Moderate, 7 to 8 grams per liter.
Tasting Notes
Golden highlights combined with the intense depth of a great red wine. On the nose, the nobility of small red fruits with notes of redcurrant, cherry, and wild strawberry, and a touch of spice. On the palate, a subtle combination of structure, length, and liveliness, with a tannic side reminiscent of red wine. A fine, velvety bubble, and aromas of wild red berries.
Food Pairings
Langoustine, lobster, salmon, Japanese, or mildly-spiced Asian cuisine. Or fruit-based desserts such as fruit soup, strawberry tart, and raspberries.

Tasting Notes: An enticing rose Champagne, with a core of ripe and juicy raspberry, white peach and cherry, fragrant anise, cardamom and cumin, plus accents of slivered almond, candied ginger, blood orange peel and white blossoms. Mouthwatering and harmonious, with a fine, raw silk-like mousse and a long, long finish. Pinot Noir, Chardonnay and Pinot Meunier. Drink now through 2030.

Tasting Notes: Very attractive aromas of strawberry pie with the crust nicely crispy. Copper and iron too. Medium-bodied with real Pinot Noir character as well as salted butter, hints of barrel and a juicy finish. [...] barrel-fermented Pinot Noir [...], [...] Chardonnay and the rest Pinot Meunier. Rose just keeps getting better. Drink now.

Tasting Notes: First released in 2008 [...]. A medium salmon hue [...], the nose is beautiful and has a lovely touch of opulence in its notes of preserved Amarena cherries, ripe red fruit, toasted brioche, and fresh roses. The palate offers a luxurious feel, with power and elegance that suggest decadence, but it’s not sweet. It has a refined mousse, with a chalky and pithy, orange-tinged structure, wonderful length, and a good core that will easily age another 10 or more years.

Tasting Notes: [...] the Rose Brut shows a solid orange salmon color. Fresh strawberry and currant on the nose with light minerality, then turning to blood orange flavors. Creamy fresh mousse and medium-bodied, the palate is richly fruity, spicy and crisp with an intense finish. A hint of phenolicy spicy, bitterness adds complexity.

Tasting Notes: Mostly red grapes (76 percent), this gains its color from [...] red wine added to the blend. The red fruit comes across in scents of sour cherries and in the depths and richness of the flavor. It’s also there in the subtle radish-like edge to the grape-skin tannins that make this a wine that could stand with roast veal.

Tasting Notes: The latest release of Bollinger's NV Brut Rose is showing especially well, offering up complex aromas of sweet stone fruit, honeycomb, freshly baked bread and orange oil, followed by a medium to full-bodied, pillowy and vinous palate. Layered and concentrated, with a pretty pinpoint mousse and ripe but racy acids, it concludes with a long, expansive finish.

Tasting Notes: Pretty notes of strawberry and cherry are trimmed in yeast, quinine and citrusy nuances where the latter is picked up by the delicious and vibrant middle weight flavors where the supporting mousse is dense and moderately fine while the finish is clean, dry and complex. For my taste this is drinking perfectly now though it could easily be held if desired.

Tasting Notes: Aromas of bruised apple, redcurrants, wild berries, rose petals and orange peel. The palate has good structure, vibrant acidity and a foamy mousse, with caramelised brown sugar, strawberry and umami notes. A zesty mineral finish.

Tasting Notes: 62% Pinot Noir, 24% Chardonnay and 14% Pinot Meunier. [...]. 5-6% of the Pinot Noir vinified as red wine. [...]. Winemaker Gilles Descotes. [...]. Really complex nose. Oak in evidence but one forgives this for Bollinger! A delightfully complex wine for the table. Very long but not for those seeking maximum refreshment. (JR)
