Density: 5,600 stocks per hectare

Culture
Sustainable cultural practices. Monolateral spurred cordon training system. Clearing out the unripe grapes in July and August. Grapes are entirely hand-harvested. Hand-sorting on the vine, followed by a double selection of the best berries on sorting tables.

Vinification
Cold pre-fermentation maceration for 48 hours at 8 degrees C. Fermentation in 30-hl oak casks to optimize parcellar selection. Filling of the oak casks entirely by gravity flow. Fermentation temperature of 26-28 degrees C with punch-downs. Maceration on the skins for 21 days.

Aging
In French oak tonneaux for 24 months. In oak casks for 12 months. Refining in bottle for a minimum of 12 months.
