Terroir and Winemaking
Our Touraine Sauvignon is our main wine and originates from clay-limestone slopes adorned with flint incrustations (known as perruches), situated on the right bank of the river Cher. At the heart of this wine is a meticulous process that entails cold pre-fermentation maceration, followed by low-temperature fermentation, culminating in six months of maturation in stainless-steel tanks.
Tasting Notes
This Sauvignon Blanc presents a golden hue adorned with green undertones, showcasing impeccable clarity and remarkable depth. Its bouquet exudes the essence of delicate citrus fruits, particularly grapefruit, accompanied by a discernible mineral character. With aeration, the wine unveils invigorating hints of freshly squeezed lemon entwined with white fruit, pear, and green apples. On the palate, the wine possesses a crispness that borders on a steely sharpness, bursting forth with vibrant flavors of gooseberry, peanut, and nettle, courtesy of its aging on lees. The refreshing persistence on the palate impeccably harmonizes with the wine's overall structure.

Tasting Notes: A solid bottling from start to finish. Fruity aromas of white nectarine, tangerine zest and orange blossom open on the nose accented with honeysuckle. Steely in texture, the palate washes across crushed stone before emptying into a pool of Meyer lemon and chalk.Â
