Winemaking Notes
Total crushing and destemming. Low temperature skin contact maceration. Pneumatic low-pressure press. Long cold stabulation (4 degrees C) and medium temperature fermentation (18 degrees C). Two to 6 months aging on spent lees with stirring. Low-dose fining and cooling treatment. Filtration on palates during airtight bottling.

Tasting Notes
Pale lemon color with green tints. Brims with peach, exotic fruits, grapefruit, gooseberry, citrus, and mineral aromas and flavors. Shows good balance between acidity and roundness. Structured, fleshy, and mouth-filling. Long on the finish.

Service
Best served at 45-52 degrees F with seafood, fish, white meat, and goat cheese. Drink now for full aromatic expression. Optimal drinking time is one year, with a potential for aging up to 5 years.
