Winemaker's Note
Amarone is a great red wine from the Veneto region, famous worldwide as an ambassador for Italian winemaking excellence. It is produced from native Valpolicella grapes such as Corvina, Rondinella, Corvinone, and Molinara, which are left to dry for a few months, developing remarkable aromatic richness. Prestige and quality are recognized throughout the world: elegance, structure, and complexity that have reached the top of the world wine scene.
Vinification
Bunches are hand-picked and rigorously selected at the end of September, then the "appassimento" process begins, leaving the grapes in a wooden cage for 60 days. Soft pressing of the grapes in December/January, followed by 30 days of maceration on the skins.
Aging
60% of the wine is refined for 24 months in large oak barrels, and 40% is refined for 18 months in new French barriques from Allier oak, then 6 months in bottles.
Tasting Notes
The scent of dried plums and cherries with hints of undergrowth and dried mushrooms. Through the aging and appassimento process, the wine develops ripe fruit notes such as black cherry and wild berry, united with tertiary notes like tobacco, leather, and earthy scents.
Service
Serving temperature of 18-20 degrees C. Recommended to open the bottle at least 1 hour before drinking.
Food Pairing
The best match for Amarone is complex flavors that balance the wine's power and structure. Game, tasty meat, braised and roasted meat, and aged cheese.

Tasting Notes: A rich and toasty Amarone with aromas of minerals, dried fruit, dark licorice and a hint of coffee beans. Full and concentrated but not heavy, it has a juicy flow with polished tannins and a core of sweet spices. Firm and persistent finish, leaving a savory, bitter cocoa note. Better after 2026.
