2025 Governo all'Uso Toscano Toscana IGT

Vinification Notes
'Governo all'Uso Toscano' is the rediscovery of an ancient winemaking process that recalls the rich history of a specific terroir and characterized the wines of the Chianti area between the 19th century and the beginning of the 20th century. This wine is produced with grapes from the Tuscany region, harvested in September. The fermentation is carried out initially in stainless-steel tanks at a controlled temperature. After racking, the second fermentation begins by adding grapes harvested in September to the bulk wine; these grapes underwent a drying process in dedicated rooms called 'fruttai'. The drying process is carefully controlled to ensure that the grapes remain perfectly undamaged and rich in sugar content throughout the four-week process. This slow second fermentation takes place in large tonneaux, and thanks to it, the wine becomes smoother, softer, and full-bodied, while still maintaining Sangiovese's strong personality and elegance.

Tasting Notes
Intense ruby red. Fruity bouquet with red fruit hints, enriched by notes of spices. In the mouth, it is soft, round, and pleasantly fresh.
